I found this awesome recipe this week!
Gluten-Free Banana Bread
2 c. gluten-free baking flour
1 t. baking soda
1/4 t. salt
4 eggs
2 c. mashed ripe bananas
1 c. sugar
1/2 c. unsweetend applesauce
1/3 c. oil
1 t. vanilla
1/2 c. chopped walnuts (optional)
Combine flour, baking soda, and salt. In a smaller bowl whisk eggs, bananas, sugar, applesauce, oil, and vanilla. Stir into dry ingredients until moistened. Pour into two 8" x 4" loaf pans (or one 8" x 8" square pan) coated with cooking spray. Sprinkle with walnuts. Bake at 350 for 45-55 minutes, until knife inserted in the middle comes out clean.
