recharged
Friday morning I called in sick to work. Part of the reason was for a much needed mental health day after all the stress and craziness that has been going on the last couple weeks. The other part was because I had a chance to tag along as Mom, Dad, and the girls made a quick trip over to California. If there is one place where I can recharge my batteries, it is at the coast and I never pass up an opportunity to go! It was a VERY quick trip. We left Friday morning about 6:30 am and got back into town Sunday morning about 2am. Aunt Judi had knee surgery a few weeks ago and needed someone to help her get home and settled until another family member was able to come into town to stay with her for a while. She asked Mom to come and so we went! :)
Our first stop was Bob's Big Boy! They used to have Big Boy's in AZ and they are one of Dad's favorites. So whenever we can we stop on our way to or from Cali. They are the best burgers ever!!
When we got into town, me and the girls got dropped off at the Buena Park mall while Mom and Dad when to pick up Aunt Judi and get her home. We shopped for a couple hours (I bought some air fresheners at Bath and Body Works, and then 2 shirts and a couple Christmas presents for friends at Ross). Dad came and picked us up later and we went to check into the hotel that us girls were staying at Friday night. After we put all our stuff in the room we drove down to Huntington Beach and walked out along the pier, enjoying the ocean and watching people fish and trying to surf.
We had Panda Express for dinner then went back to the hotel room and watched "Hunger Games." **See random moment detailed below**
On Saturday we got up, checked out, and drove up to Long Beach. We had breakfast at Jack in the Box (after driving for an hour and a half trying to find out, and passing about 15 different donut shops), then went to a little shopping village called Ports 'O Call. Supposedly it was a happening little place back in the day, but it was mostly dumb when we went. Only about 4 shops were open and there really wasn't much to do. We walked around, went in the few shops that were open and then left.
We drove around for a while, discussed going to see a movie but decided there really wasn't anything out that everyone wanted to see, went to an indoor swap meet that was mostly dumb, got lunch at McDonald's, picked up a 2 liter of Coke Zero for Aunt Judi and a box of tissues for Faith (she started having a severe allergic reaction to something and was sneezing constantly all day!) then went and picked up Mom, and said Hi and Bye to Aunt Judi. Once we were all back in the car, we headed up to Manhatten Beach just for the heck of it. Mom wanted to see the ocean before we left and Dad said there were a lot of shops up there. We walked out on the pier, watched the waves and people swimming/surfing, watched people fishing off the pier, and just enjoyed the day. There was a big beach volleyball competition going on. Turns out Manhatten Beach is the place to go for beach volleyball. Who knew?
There was this cool little aquarium in the building out at the end of the pier. It was fun to go in and see the fish that they had.
While we were watching the swimmers and fishermen on the pier we could see several schools of fish down in the water. We watched for a long time. Julia and I saw a ray at one point and we're pretty sure we saw a small shark as well. It was cool!
The shops were more ritzy than touristy, but we walked around for a little bit window shopping. Everything was starting to close down though, so we didn't stay for long. Faith wanted to stop and see the Redlands temple, since it was sort of on the way home. Stopping to see temples has turned into a sort of tradition when we're on roadtrips. When we got there it was getting dark. It was cool to see the temple all lit up.

After the temple, we headed home. We stopped about an hour later and had dinner at Sizzler. They kept bringing us out toast. Funny thing is: only 2 out of the 5 of us eat bread anymore. Mom had to convince Dad that it was okay to just leave it instead of taking it home.
Very quick trip but really good!
Things I learned: What Merchant Marines are. There was a memorial wall up at Port 'O Call for Merchant Marines who have died. I wasn't sure what they were and ended up looking it up on wikipedia.
Random moment: While we were sitting in our hotel room watching "Hunger Games" there was a knock on the door. We all looked at each other then the knock came again with the call, "Housekeeping." Again, we all looked at each other because none of us had called or requested anything from housekeeping. Dad went to answer the door and this little Asian guy came walking into the room with a mini fridge on a dolly and proceeded to set it up and then left. We all looked at each other and laughed about the randomness. THEN: 15 minutes later we got ANOTHER knock on the door. This time it was a lady with ANOTHER mini fridge. "You requested a fridge?"
Uhm. No.
Not only did we not request a fridge, we were already given one.
We all laughed.
Random.

gluten-free pancakes
After waking up early from some stressful and scary dreams, I decided to cook something for breakfast instead of just having my usual bowl of cereal. I found this recipe online and they are super yummy!!
Gluten-Free Pancakes
2 egg whites, stiffly beaten (set aside)
3/4 c. warm water
2 Tbsp vegetable oil
1/2 tsp vanilla
1 Tbsp honey
1/2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
1 1/3 c. gluten-free baking flour
Combine flour, baking powder, salt, and baking soda in a medium bowl. In another bowl combine honey, vanilla, oil, and warm water. Mix wet ingredients with dry ingredients then gently fold in the egg whites.
Ladel pancake batter onto a preheated and oiled grill, flip over when they begin to puff and become lightly browned on the edges.

excuse me while i vent
I feel like I've been sucker-punched repeatedly this week and I've been fighting the urge to throw up for the last 24 hours.
Tuesday I got a call from my Mom at about 3:15 saying she got a call from the alarm company that my alarm had gone off at the house. I had to provide a second emergency contact number when I had the system installed, but I was told I would be the first one called. However, NO ONE CALLED ME! Then I was freaking out, and ready to put the house on the market and move becuase I can't handle being broken into twice in a year. I texted my roommate to see if she was at home--to make sure she was okay. While waiting to hear back from her, the police station called because they were alerted. In the meantime Anna-Lisa (roommate) texted back and said she had just left and things were fine. Turns out she hit the panic button instead of the alarm button to set the system when she was leaving for work. So then I had to have my mom call the alarm company back and I told the police station it was a false alarm and tried to get my hands to stop shaking and my heartrate to go back to normal. I got a letter in the mail today that said I get one free pass on a false alarm. Any others are $200. Great.
Yesterday I received a notice in the mail that the state doesn't have any records of me filing taxes for the 2008 tax year. Excuse me?! After a frantic search last night through all my documents both in my paper files and on the computer, I found my tax forms. I DID file. However, I couldn't find any record of the payment for the amount I owed that year ever having been drafted from my checking account even though I provided all the requested account information. So now I have to send in my 2008 tax forms--AGAIN--and pay $134 to the state that should have been taken care of four years ago!
This afternoon I received an email letting me know that my checking account was overdrawn. It's been a VERY tight month and I knew I wasn't going to have everything I needed to cover my bills so I paid my car insurance premium with my credit card. However, the insurance company went ahead and did the automatic payment anyway, which means they received two payments this month and I now have an overdraft fee charged to my account and an outstanding balance of $101!! I literally started shaking at my desk when I got the email and figured out what was going on and couldn't concentrate or do any work for the last half hour of the day. I fought the urge to throw up and made it out to my car after I clocked out to make a phone call. After a very terse call to the insurance agency I was informed that even if I make a payment online or over the phone there's always still the chance that the automatic withdrawal will still go through and they won't pay my overdraft charge becuase it wasn't the company's fault. I informed them that I was NOT informed of this when I made the payment and I CANNOT afford to make two payments this month and one of them needs to be refunded NOW. I was told that I had to fax in copies of my bank and credit card statements showing both payments having been processed. I about threw my phone through my windshield and I would have literally slapped the woman if I had been talking with her face to face. I drove home on the verge of tears, printed out the requested documentation, then drove over to my parent's house to use their fax machine.
My team had a potluck at work today for lunch. I was forced to be in charge of putting the thing together becuase everyone wanted to have it, but nobody else wanted to be in charge of it. So, I sent out the email reminders, put it on the calendar for everyone, and got people to sign up to bring stuff. We were all set to go, but then my boss called in sick (so we were left without the items she had signed up to bring--and this is another sore spot I have. She called out ALL THE TIME! Yet, we lowly peons who actually do all the work are only allowed to call out once every quarter. Any more than one time and we get in trouble with the threat of disciplinary action and possible termination. I'm pretty sure she's called out AT LEAST ten times the last quarter. Probably more. In what world is that fair?!) and then everyone wanted to start eating at 10:30. I'm sorry. This is a LUNCH potluck. 10:30 IS NOT LUNCH TIME!! But I couldn't say or do anything without being the party pooper and looking and acting completely childish and immature, so I just gritted my teeth, and went along with it. I'm not planning anymore team activities. What's the point when people come and go as they please and do whatever the hell they want? We don't need anyone to be in charge. Just do what you want. Then, to top everything off, people that aren't a part of the team and who didn't bring anything to share were invited over to help themselves. NO!
I have a wrinkle in between my eyes on the bridge of my nose that won't go away.
My left thumb is in constant pain. But I can't afford the co-payment to go to the doctor.
My car is leaking oil. But, again, I can't afford to take it in to have it looked at.
I keep getting these thoughts/promptings that I need to go to the gynecologist. I haven't been in YEARS because I'm not sexually active and never have been, so what's the point. But I can't put off these feelings. I'm afraid that means somethings wrong and I'm going to die.
My pool is a disgusting mess but it's no use cleaning it becuase as soon as I do another storm is going to blow through dumping a foot of dirt into it.
I'm fat. I'm sick of all my clothes but can't afford new ones. The shoes I bought last week gave me big blisters on my heels yesterday that hurt like crazy. It's hot and sticky outside and I just need someone to give me a hug and tell me everything is going to be okay even though it's not.

gluten-free banana bread
I found this awesome recipe this week!
Gluten-Free Banana Bread
2 c. gluten-free baking flour
1 t. baking soda
1/4 t. salt
4 eggs
2 c. mashed ripe bananas
1 c. sugar
1/2 c. unsweetend applesauce
1/3 c. oil
1 t. vanilla
1/2 c. chopped walnuts (optional)
Combine flour, baking soda, and salt. In a smaller bowl whisk eggs, bananas, sugar, applesauce, oil, and vanilla. Stir into dry ingredients until moistened. Pour into two 8" x 4" loaf pans (or one 8" x 8" square pan) coated with cooking spray. Sprinkle with walnuts. Bake at 350 for 45-55 minutes, until knife inserted in the middle comes out clean.

Me: What did you name it?
John: Him name Harold.
Me: *trying not to laugh* That's an awesome name for a worm!
John: Yeah.
Harold?? Hahahaha!! I stinking love that kid!

dunkin donuts
Today at work we had a required "Professional Dress" day. The reason? Because we had some visiting members of the HLC (Higher Learning Commission) who were taking a tour as part of UOP's accreditation process that's taking place this year. So, we all had to be on our best behavior. Everyone was grumbling last week about having to be in professional dress today, so I decided to do something to help make everyone on my team happy again.

Two things that made me smile the last couple days:
#1. USA Women's Gymnastics team won gold!!!
These girls are so cute and they worked their butts off the last several nights!! It was rocky there for a while--they weren't looking so hot in the qualifying rounds, but they brought their A game in the finals and earned those medals. It was awesome to watch!
#2. Woke up this morning to this tweet from Chris Kirkpatrick (from NSYNC) that made me feel all warm and fuzzy inside.
I love that they're still best friends after all this time.
