I signed up for Weight Watchers yesterday. I have 12.5 weeks until my trip to Oregon and my birthday. Time to get real and make some changes! My daily points limit is 49. I tried a new recipe tonight that was pretty good.
Tex-Mex Rice and Bean Casserole (6 servings, 5 points per serving)
1 c. canned yellow corn, drained
1 T. canned green chilis
15 oz canned pinto beans, rinsed and drained
1 c. cooked brown rice
3/4 c. shredded, reduced-fat, Mexican-style cheese
3/4 c. fat-free sour cream
1/4 t. chili powder
1/4 t. salt
1/8 t. black pepper
2 T. scallions, chopped (dark green part only)
1 T. shredded, reduced-fat, Mexican-style cheese
Preheat oven to 300. Coat a 2-quart glass baking dish with cooking spray. In a large bowl combine corn, chilis, beans, rice, 3/4 c. cheese, sour cream, chili powder, salt and pepper. Stir in scallions. Spoon mixture into prepared baking dish and bake for 30 minutes. Remove from oven and sprinkle with remaining 2 T. of cheese. Return to over and bake until cheese melts and casserole is slightly bubbly (10 minutes). Let stand for 5 minutes to firm up. Slice into 6 pieces.
